Break Out the Jackets!

Tuesday was a blustery, chilly day with max temps about 20 degrees below normal. This produced record-low high temperatures across east central Florida, after record lows this morning. Temperatures will fall quickly Tuesday night with patchy to areas of frost developing north of Orlando late Tuesday night into early Wednesday.

Wednesday: Mostly sunny and pleasant, with a high around 73 °F (23 °C) and a low about 46 °F (8 °C). Tip: Perfect day for errands or a stroll—morning is chillier, but midday opens up nicely.

Thursday: Another pleasant day. Sunshine dominates, high near 75 °F (24 °C), low around 53 °F (12 °C). Tip: Light layers will be enough; you’ll likely find yourself comfortable in just a long-sleeve or light jacket.

Friday: Very similar to Thursday: plenty of sunshine, high around 76 °F (25 °C) and low near 61 °F (16 °C). Tip: A great day to get outside—maybe plan something outdoors if you’ve been waiting for nicer weather.

Saturday: Looks like another fine day: high near 78 °F (26 °C) and low around 60 °F (16 °C). Sunshine, warm air, and no major weather hazards. Tip: Ideal for outdoor hobbies, relaxed time by the water, or catching up on whatever you’ve got.

BREVARD COUNTY, FLORIDA – Fresh From Florida shows you how to make a delicious recipe for Florida blue crab cake Benedict.

INGREDIENTS

Blue Crab Cake Benedict

■ 1 pound Florida crabmeat, drained, shell pieces removed

■ 1 large Florida tomato, sliced

■ 4 eggs, pan-fried

■ ¼ cup red onion, finely chopped

■ 2 tablespoons fresh parsley, chopped

■ 3 tablespoons light mayonnaise

■ 2 tablespoons Dijon mustard

■ ¾ teaspoon seafood seasoning

■ ½ teaspoon Worcestershire sauce

■ 2 egg whites, lightly beaten

■ 1 ½ cups panko (Japanese breadcrumbs), divided

■ 2 tablespoons olive oil

Hollandaise Sauce

■ 3 eggs, yolks separated

■ ¼ teaspoon Dijon mustard

■ ½ lemon, juiced

■ Hot pepper sauce, to taste

■ 1 stick unsalted butter, melted

■ Sea salt, to taste

PREPARATION

Blue Crab Cake Benedict

■ Combine the red onions, parsley, mayonnaise, mustard, seafood seasoning, Worcestershire sauce, and egg whites a medium bowl. Gently fold in crabmeat and ¾ cup panko.

■ Cover and chill 30 minutes. Shape the crab mixture into 8 patties about ¾-inch thick. In a shallow dish, roll the patties in the remaining ¾ cup panko, coating them evenly.

■ In a nonstick skillet over medium heat, heat oil and cook 4 crab cakes at a time for 7 minutes until golden brown on each side.

Hollandaise Sauce

■ In a blender or food processor, add mustard, lemon juice, egg yolks, and a few dashes of hot pepper sauce. Blend the ingredients, then slowly add the melted butter until the mixture thickens.

■ Taste hollandaise and adjust seasoning with salt and hot pepper sauce. Serve the sauce immediately.

■ To assemble Florida Blue Crab Cake Benedict, place one or two slices of tomato on each plate. Season the tomato lightly with salt and pepper. Place a pan-fried egg over each tomato slice.

■ Add a crab cake to the top of each pan-fried egg. Evenly distribute the hollandaise sauce over each crab cake and serve immediately.

It is with a heavy heart that we announce the sudden passing of George Joseph Rotsch on September 15, 2025. He proudly co-owned and operated Tiffany’s, a popular local bar and restaurant, alongside his mother, Joan, where his warmth and charm won the hearts of all patrons and staff.

BREVARD COUNTY, FLORIDA – It is with a heavy heart that we announce the sudden passing of George Joseph Rotsch on September 15, 2025.

Born on May 18, 1957, in Queens, New York, he is survived by his loving wife, Joanne, and his two cherished sons, Shane (Kelly) Rotsch and James Rotsch, whom he adored, and he was eagerly awaiting the arrival of his first grandchild.

George was also a loving nephew to Wayne (Aime) Zimmerman and Debbie (Fred) Tarbutton. He leaves behind a legacy of love and joy for many nieces, nephews, cousins, great-nephews, and great-nieces, as well as his extended family, community friends, neighbors, and coworkers. These individuals will cherish the moments they spent together and continue to honor his memory.

George was married to his high school sweetheart, Joanne, for 45+ years. Together, they created a life full of love, laughter, and adventure. George grew up on Long Island, New York, and later settled in Melbourne Beach, Florida, where he became an integral part of the community.

He proudly co-owned and operated Tiffany’s, a popular local bar and restaurant, alongside his mother, Joan, where his warmth and charm won the hearts of all patrons and staff. Eventually, he transitioned to a career as a commercial clammer and spent several years employed at Patrick Air Force Base.

He was also proud to be part of the staff at Immaculate Conception Church in Melbourne Beach, Florida, where his contributions touched many lives. Most recently, George found fulfillment working at Publix, where he continued to build lasting relationships with customers and coworkers.

His genuine affection for his family was only rivaled by his passion for his beloved New York Jets, with whom he shared many memorable moments, especially when he could be found good-naturedly heckling Miami Dolphins fans.

A true animal lover, George also had a special bond with his three Boston Terriers, whom he affectionately called “New York” terriers. He was known for his love of road trip adventures, often exploring new places that created cherished memories.

Recently, George discovered a hidden talent for art, a passion that brought him much joy. As of late, he has lived his life with pride in his sobriety, embracing every day with a renewed sense of purpose and positivity.

George had a remarkable gift for making friends easily and bringing joy to everyone around him. His infectious laughter, gift of gab, and sense of humor lifted the spirits of all who encountered him. He had a kind heart and easygoing nature that made him a beloved figure in the community, and he will be remembered for his unwavering generosity, good humor, and genuine kindness.

Please join us as we gather for a Funeral Mass on Saturday, October 18, 2025, at 11 a.m. at Immaculate Conception Catholic Church in Melbourne Beach, Florida. In lieu of flowers, donations can be made to Florida Aide to Animals.

Rest in peace, George. Your spirit, laughter, and love will live on in all of us.

Printing is still an important part of many businesses, schools, and households. While digital communication has reduced the need for paper, printing continues to be essential in countless situations. Unfortunately, traditional printing can place a heavy burden on the environment. Paper waste, excessive energy use, and non-recyclable cartridges all contribute to the problem. The good news is that small changes can make a big difference. By adopting eco-friendly printing habits, anyone can reduce waste and save money at the same time.

Print Only When Necessary

The most effective way to make printing eco-friendly is to avoid printing when it is not essential. Many documents can be reviewed, signed, or shared digitally. Email, cloud storage, and online collaboration platforms make it easier than ever to reduce unnecessary printing. Before hitting the print button, ask whether the document truly needs to be on paper.

Choose Recycled Paper

Recycled paper is a simple switch that reduces the demand for raw materials. It requires fewer trees, less water, and less energy to produce than virgin paper. Look for paper with a high percentage of post-consumer waste, which ensures that old paper products are being reused effectively. “This year’s parade highlights some of the Space Coast’s top builders and offers a wide variety of options across several price points,” said John Thomas, CEO of the Space Coast Home Builders and Realtors Association.

With many communities throughout Brevard represented in this year’s parade, buyers can choose the location that best suits their needs.

“Though the residential real estate market is adjusting across the country, the Space Coast remains one of the best places to buy a new home anywhere in the United States,” said Thomas.

“This year’s parade once again highlights some of the Space Coast’s top builders and offers a wide variety of options across several price points,” said John Thomas, CEO of the Space Coast Home Builders and Realtors Association. The Parade of Homes is possible through the support of sponsors in the industry. Megan Ross with the Ross Group explains why her company chose to again be the official Realtor Sponsor for the event.

“The Parade of Homes is an excellent way for local builders to showcase their homes and communities to the general public who otherwise might not be aware of their options when looking to build,” she said.

“It also gives Realtors a chance to preview homes and communities to stay knowledgeable within their market. In a world so focused on technology and digital marketing, the Parade of Homes is a way for builders to highlight what makes them different by utilizing that in-person special touch.”

Megan Ross with the Ross Group explains why her company chose to be the official Realtor Sponsor for the event again. “The Parade of Homes is an excellent way for local builders to showcase their homes and communities to the general public who otherwise might not be aware of their options when looking to build,” she said.

The self-guided tour is a cinch to navigate, thanks to QR codes noted in the Parade of Homes magazine available digitally. With a smartphone, attendees can scan the location of the entries and obtain driving directions in a flash.

The Parade of Homes is not only a feast for the homebuyers’ eyes, but it also offers a chance to become acquainted with builders they can trust to make home dreams into reality.

“Prospective buyers can have peace of mind knowing that the builders in our association follow a code of ethics and are committed to providing the highest quality homes,” said Thomas.

Entries in the Parade of Homes are typically open from 10 a.m. to 5 p.m. Mondays through Saturdays and from noon until 5 p.m. on Sundays during this self-guided tour. However, HBCA recommends calling the specific model home directly to ascertain hours of operation.

BREVARD COUNTY, FLORIDA – When the Florida heat is in full swing, nothing beats a cool, refreshing drink that highlights the Sunshine State’s best produce.

The Florida Watermelon Sunrise is a bright, fruity cocktail that balances juicy watermelon, zesty citrus, and a hint of fizz for the perfect summer sip.

Whether you’re lounging by the pool, hosting a backyard cookout, or looking for a colorful signature drink to impress your guests, this recipe delivers both flavor and Florida flair.

Ingredients

■ 6 cups Florida watermelon chunks, pureed
(Choose a ripe, seedless Florida watermelon for the sweetest flavor.)

■ 2 Florida oranges, juiced
(Fresh-squeezed makes all the difference—bright and naturally sweet.)

■ ½ cup vodka
(For a local touch, try Florida Fish Hawk Spirits vodka or your favorite premium brand.)

■ ½ cup ginger beer (or to taste)

Ceremony, bench, tree pay tribute to late Viera Hospital President, a ‘visionary’ and beloved family man

BREVARD COUNTY • VIERA, FLORIDA — It was Dustin Boring’s quiet strength that built positive relationships, no matter the person.

On a warm mid-September day, dozens of Health First colleagues and associates gathered under white tents, shielding themselves from the hot sun as they paid tribute to Dustin, who passed away in July. A bench bearing Dustin’s name now rests just south of the medical center plaza, facing a small tree planted in his honor.

“I am in absolute awe of the legacy that our beautiful Dustin has made without ever, ever intending to be,” Danielle said, speaking at the podium with loved ones by her side. She added with a smile, “he would be mortified right now, if he knew this was going on.”

Dustin was always to the point, Danielle said, wiping tears from her eyes, as the crowd collectively did the same in between sniffles. Sure, he understood the importance of the bottom line, but he never let that influence how he led. Dustin always did what he thought was best.

Mourners and colleagues pay tribute to Dustin Boring, the late Viera Hospital President. He passed away in July. A bench bearing his name now resides in the courtyard area of the Health First-Viera campus. A tree was planted to honor his memory – and provide colleagues a place to sit and reflect.

Mike Mullowney, Hospital Division President for Health First, opened up the ceremony. He began by sharing with the dozens of attendees – many in scrubs and white coats – that this was a moment to reflect on the countless ways Dustin touched so many lives with his spirit of compassion.

“He left each and every one of us that were close to him better than he found us,” Mullowney said. “What a meaningful and purposeful life that is to have.”

The tree planted and the bench built were dedicated “will stand as living symbols of Dustin’s enduring impact on our Health First family and our community – a place where associates, friends and loved ones can pause, remember and find comfort in his memory,” Mullowney shared.

Dustin had been named president of Viera Hospital in November 2024, after serving as Vice President and Hospital Administrator since joining Health First in 2018. Previously, Dustin spent more than a decade in leadership roles at Indian River Medical Center.

Known for his compassion and integrity, Dustin was a graduate of Eastern Florida State College and St. Leo University.

Chaplain Sean Ricks shared how Dustin was more than a hospital president.

“He was a visionary who transformed lives with his unwavering dedication to care, innovation and kindness,” Ricks reflected. “Under his leadership, this hospital became a beacon of hope – a place where patients found not just treatment but compassion, and where staff were inspired to reach new heights.”

The tree, standing long and tall, symbolizes Dustin’s enduring impact. While his colleagues definitely feel a hole in their hearts, his legacy will endure. As the tree grows, it will provide the shade and solace, much like the comfort Dustin offered so many.

“Its branches reaching toward the sky remind us of his boundless ambition to improve health care for everyone in Brevard,” Ricks said.

“The bench beside it is a place for reflection – a space where we can sit, remember and draw inspiration from his life, and it invites us to pause to share stories of his warmth, his sense of humor and his relentless drive to make a difference, whether it’s a quiet moment for a grieving family, a conversation among colleagues or rest for a weary caregiver.”

More than anything, Dustin will be remembered for his generous heart, spirit and compassionate care for others. Danielle shared how her husband’s kind spirit left an indelible mark on so many.

“Remember him,” she urged. “Follow his blueprints. Listen to each other. Be patient with each other. Be kind to each other.”

“Through the Take Stock in Children program, we pair high-risk, low-income students with dedicated mentors, college readiness coaches, and the promise of a two-year college scholarship,” said Janice Kershaw, Brevard Schools Foundation President & CEO. “Your support helps break down barriers, enabling many first-generation college students to achieve their dreams.”

The results of this event are truly remarkable:

■ All of our 270 active seniors over the past five years graduated from high school.
■ 60% earned college credits before high school graduation.
■ 35 students completed their associate degrees with their high school diplomas.
■ Graduates live longer, are more likely to vote, and are three times more likely to be employed, giving back to our community in fields like education, healthcare, engineering, and cybersecurity.

“Every dollar you contribute that’s applied towards scholarships is doubled through a match from the Florida Prepaid College Foundation, amplifying your impact,” said Kershaw.

“Funds raised support scholarships (including our annual $125,000 purchase) and program operations, ensuring every graduating mentee receives life-changing educational opportunities.”

STARBASE, TEXAS – SpaceX will attempt its 10th Starship test flight on Tuesday, August 26, at 7:30 p.m. ET after the launch was scrubbed on Sunday and Monday due to an issue with the liquid oxygen system at the launch site.

The mission, scheduled to lift off from Starbase, Texas, aims to test the Starship upper stage’s ability to land safely and perform in-flight experiments.

The launch was initially scheduled for Sunday, August 24, but was called off shortly before liftoff due to a ground system problem at the launch site.
What’s next: The company has corrected the ground system issue and will proceed with the launch if weather conditions and other factors are favorable.

Mission objectives include the Super Heavy booster to make a controlled water landing in the Gulf of America, as the Starship upper stage will continue into space to conduct in-flight experiments before attempting a controlled atmospheric reentry and landing.

A live webcast of the flight test will begin about 30 minutes before liftoff, which you can watch on spacex.com and on X @SpaceX.

After completing the investigations into the loss of Starship on its ninth flight test and the Ship 36 static fire anomaly, hardware and operational changes have been made to increase reliability. You can read the full technical summary of the investigations here.

The upcoming flight will continue to expand the operating envelope on the Super Heavy booster, with multiple landing burn tests planned.

It will also target similar objectives as previous missions, including Starship’s first payload deployment and multiple reentry experiments geared towards returning the upper stage to the launch site for catch.

The booster on this flight test is attempting several flight experiments to gather real-world performance data on future flight profiles and off-nominal scenarios.

The Super Heavy booster will attempt these experiments while on a trajectory to an offshore landing point in the Gulf of America and will not return to the launch site for catch.

Following stage separation, the booster will flip in a controlled direction before initiating its boostback burn.

This maneuver was demonstrated for the first time on Flight 9 and requires less propellant to be held in reserve, enabling the use of more propellant during ascent to allow for additional payload mass to orbit.

The primary test objectives for the booster will focus on its landing burn and utilize unique engine configurations.

One of the three center engines used for the final phase of landing will be intentionally disabled to gather data on the ability of a backup engine from the middle ring to complete a landing burn.

The booster will then transition to only two center engines for the end of the landing burn, entering a full hover while still above the ocean surface, followed by shutdown and drop into the Gulf of America.

The Starship upper stage will again target multiple in-space objectives, including the deployment of eight Starlink simulators, similar in size to next-generation Starlink satellites.

The Starlink simulators will be on the same suborbital trajectory as Starship and are expected to disintegrate upon entry. A relight of a single Raptor engine while in space is also planned.

The flight test includes several experiments focused on enabling Starship’s upper stage to return to the launch site. A significant number of tiles have been removed from Starship to stress-test vulnerable areas across the vehicle during reentry.

Multiple metallic tile options, including one with active cooling, will test alternative materials for protecting Starship during reentry.

On the sides of the vehicle, functional catch fittings are installed to test their thermal and structural performance. Additionally, a section of the tile line is receiving a smoothed and tapered edge to address hot spots observed during reentry on Starship’s sixth flight test.

Starship’s reentry profile is designed to intentionally stress the structural limits of the upper stage’s rear flaps while at the point of maximum entry dynamic pressure.

Flight tests continue to provide valuable learnings to inform the design of the next-generation Starship and Super Heavy vehicles.

With production ramping up inside Starfactory at Starbase alongside new launch and test infrastructure actively being built in Texas and Florida, Starship is poised to continue iterating towards a rapidly and fully reusable launch system.
